Creamed Onions

Ingredients

·      1 pound pearl onions

·      1 ½ tablespoons butter

·      1 ½ tablespoons whole wheat flour

·      ½ cup Garelick Farms whole milk

·      ½ cup Garelick Farms half-and-half

·      ½ teaspoon salt

·      ¼ teaspoon ground black pepper

·      1 cup grated Swiss cheese (optional)


Directions

1. Preheat  oven to 350 degrees. Place onions in a large saucepan half filled with cold water. Bring onions to boil and boil for 1 minute.

2.With a slotted spoon, remove the onions, peel, and return them to the boiling water. Simmer until tender, about 10 minutes. Drain, reserving 1/3 cup of the cooking liquid.

3. Remove the onions to a shallow 2-quart baking dish.

4. Melt the butter in a small saucepan over medium heat. Stir in flour with a whisk. Reduce heat to low and cook for about 3 minutes, stirring constantly, until fragrant but not darkened.

5. Whisk in the cooking liquid along with the milk, half-and-half, salt and pepper.

Cook, whisking constantly, until thickened, about 3 minutes.

6. Pour the mixture through a fine sieve (to remove any lumps) over the onions and top with cheese.

7. Bake until bubbly, about 15 minutes.
