Carrot Cake

Ingredients

This cake is terrific with some Garelick Farms cream on top!
2 C flour
2 C sugar
2 tsp baking soda
1 tsp salt
2 tsp cinnamon
1 1/2 C oil
4 eggs
3 C ground carrots 

Icing:
I lb confec. sugar
8 oz of cream cheese
1/2 stick margarine
2 tsp vanilla 


Directions

Add dry ingredients to the oil. Add four egg yolks and mix.  Add ground carrots to the mixture. Beat the egg whites and fold in last. Pour into two greased and floured cake pans. Bake at 325 for 30-40 minutes.
